Sweet Potatoes – Ingredients:
- 1 large sweet potato
- 1 tablespoon olive oil
- A pinch each of salt and black pepper
Directions:
- Preheat your oven to 425 degrees.
- Slice the potato in ¼ inch slices, so you have even circles.
- Spread the potato slices evenly on a sheet pan, and drizzle over the olive oil, salt, and pepper.
- Roast the potatoes until fork tender, about 15-20 minutes. Take them out and set aside on a plate.
Tostadas – Ingredients:
- 8 cold thin tortillas
- 2 tablespoons olive oil
Directions:

- 1 white onion, peeled and sliced into thin half moons
- 1 tablespoon fresh lime juice
- A pinch of salt
Directions:
- In a bowl, combine all the ingredients, and work them together with your hands. This will help the onions mellow and become more palatable. Set aside until serving.
